“traditional cusine is also one casulaty of war.”

War totally disrupts lives.  Of the 150,000 displaced people in Kachin in the last 9 years, the majority of them were farmers.  the kachin farmers who’s farms have yet to be engulfed in the war, face serious issues with getting goods to the market when vital transport roads are closed for days at a time due to fighting. These factors have led to the price of kachin specific vegetables & herbs skyrocketing and becoming totally unavailable for periods.  This plus the lack of regular guests since 2011 when the Kachin capital of Laiza became under siege, has forced most of the traditional Kachin restaurants to close thier doors.

Parang

Parang is very fresh and often quite spicy. It is always a side dish with ot without lime

Sawn Htang

Sawn Htang is a light and refreshing sour soup that is prepared more like brewing tea then cooking soup.

U Hpa

a Chicken porridge that is cooked for hours till the meat becomes very tender and falls off the bones which are removed before serving

Shat Jam

Instead of fying rice, Kachin cusine uses an healthy & delicious alternative of making a rice “salad” with many herbs mixed in.

Bahkrisi Gayau

This simple raw tomato salad is a perfect side dish to freshen up any rice & meat dishes served in a meal.
